I’ve tried making “protein muffins” several times, and I’ve never really found a recipe that was just right. But finally, these turned out amazing! I think it’s the Greek yogurt that helps to keep them so moist. These are SUPER easy to make, and a perfect breakfast option for almost any nutrition plan.
-2 cups minute oats (I used Quaker brand)
-1/2 cup egg whites
-1 scoop chocolate whey protein
-1 cup plain non fat greek yogurt
-1 tsp baking powder
-1/2 tsp baking soda
-1/4 cup brown sugar splenda blend
-1 tsp cinnamon
-1/2 tsp vanilla extract
Blend bananas and egg whites together in a blender. I just used my magic bullet. Combine all ingredients together in a mixing bowl, and stir together until thoroughly combined. Spray muffin tin with low cal no stick spray. Pour 1/3 cup mixture into each muffin tin. Recipe should make 12 muffins. Bake at 350 degrees for 30-35 minutes or until cooked through. Try not to overcook, as these are absolutely when they’re nice and moist!
