•20 grams dark chocolate (85% or higher)
•1 scoop vanilla whey protein
•1/4 cup coconut flour
•1/4 cup almond milk
•1/4 cup shredded unsweetened coconut
Combine coconut flour, shredded coconut, and protein powder in a mixing bowl. Add almond milk and mix thoroughly. Form mixture into balls. If necessary, add 1 additional tbsp of almond milk to help the mixture form.
Melt chocolate in microwave safe bowl for 2-3 minutes. Roll truffles in chocolate until thoroughly coated. Freeze for 1 hour and serve.
